Cultured Wheat Products CWP®
Cultured Wheat Products CWP® is a family of two cultured wheat products of natural preservatives that has been used to extend shelf life in baked goods, cheeses, meats, salad dressings. By preventing the growth of unwanted bacteria, yeasts and molds, Cultured Wheat Products CWP® can replace chemical preservatives such as sorbates, benzoates, and calcium propionate, providing a clean label alternative.
Cultured Wheat Products CWP® is produced using a carefully controlled fermentation of wheat flour with Propionic acid bacteria. After the fermentation is completed, the product is dried to an off-white color powder. Cultured Wheat Products CWP® contains short-chain organic acids and other natural fermentation-derived metabolites that can enhance the flavor of baked goods and extend the shelf life of variety of products, including baked goods, meats, cheeses, and salad dressings.
