Pullulanase PU® is a family of three food grade pullulanases designed for use both in maltose syrup production and the brewing industry.
Pullulanase PU® is a group of pullulanases produced from a selected strain of Bacillus licheniformis. Pullulanase PU® catalyzes the hydrolysis of alpha-1,6-glycosidic linkages in branched polysaccharides. Application areas for Pullulanase PU® include high maltose syrup production and production of highly attenuated low carbohydrate beers.
